The Tikka Wines Pairing Framework

1. Map the dish

We begin by identifying the dominant food characteristics:

  • Heat level: mild, medium, high
  • Sauce base: tomato, cream, yogurt, coconut, tamarind, mustard, vinegar
  • Texture: fried, grilled, slow-cooked, creamy, dry, crisp
